Made entirely from Grillo grown at the historic Regaleali estate, Cavallo delle Fate combines the freshness of earlier-picked grapes with the body and richness of later-harvested fruit. Fermentation in stainless steel followed by four months on the lees preserves its aromatic character while adding texture and depth.
Fragrant green apple and lemon zest, with a subtle liquorice note, lead into a juicy, refreshing palate. Bright acidity balances the fruit, while a savoury, saline finish brings definition and leaves you ready for another sip. An inviting Sicilian white with enough character to shine at the table.
Pair it with grilled prawns, seafood risotto, spaghetti alle vongole or Cantonese steamed fish with ginger and spring onion. Serve at 10–12°C.
