A fresh, polished Puglian Chardonnay from the limestone hills of Castel del Monte, showing bright citrus, pear, apple, white flowers and a touch of tropical fruit, with crisp acidity, gentle texture and a clean mineral finish. Excellent with seafood, grilled prawns, white meats, creamy pasta, burrata or light Mediterranean dishes. Rivera notes that the wine is 100% Chardonnay, harvested in mid-August, fermented at controlled temperature and kept briefly on lees in cement tanks for freshness and balance.
