The estate’s flagship red is a distinctive Cabernet Sauvignon-led blend comprising 84% Cabernet Sauvignon, 5% Pinot Noir, 2% each Merlot, Petit Verdot, Tannat and Cabernet Franc, with 3% rare varieties. Deep ruby in colour, the 2021 opens with fragrant aromas of raspberry, mulberry, cassis and violet, layered with dried herbs, cedar, graphite and subtle leafy notes. The palate is medium-bodied and poised, showing vivid redcurrant and dark-berry fruit supported by crisp acidity and fine-grained tannins. Savoury touches of leather, liquorice, bay leaf and roasted spice add complexity, while hints of cinnamon and ginger carry through the long, energetic finish. More restrained and classical than a rich, sun-drenched Languedoc red, the 2021 combines Bordeaux-like structure with Mediterranean fragrance. Its balance, freshness and understated power make it both an engaging wine for the table and a compelling choice for further cellaring.Pairs well with roast lamb, duck breast, beef tenderloin, venison, herb-crusted pork, mushroom dishes or mature hard cheeses.Serve at around 18°C.
