The 2023 Les Preuses is one of the flagship Grand Cru wines from Billaud-Simon — refined, layered and quietly powerful, with the natural class of Grand Cru Chablis. Expect aromas of pomelo, ripe pear, nectarine, lemon cream, white flowers, wet stone, oyster shell, iodine, subtle honey, sweet cream and delicate baking spice. On the palate, it is silky, substantial and beautifully composed, combining ripe 2023 fruit with integrated acidity, glossy texture and a long mineral finish. Compared with Bougros, Les Preuses feels more elegant and finely detailed; compared with the Premier Crus, it shows greater depth, length and ageing potential. Excellent with lobster, crab, scallops, langoustines, oysters, sashimi, sushi, turbot, Dover sole, roast chicken, white meats in cream sauce, mushroom risotto, Comté and aged goat cheese. For a Singapore table, pair it with lobster noodles, crab bee hoon, steamed garoupa, Teochew steamed pomfret, drunken prawns, steamed scallops with garlic, seafood hor fun or premium dim sum with prawn and scallop fillings.
