Expect notes of ripe lemon, pear, green apple, candied citrus, white peach, chalk, wet stone, iodine, subtle spice and a light gingerbread nuance. The palate is round, firm and generous, with more density and breadth than the Premier Crus, but still carried by Chablis’ classic saline freshness and mineral backbone. Bougros is typically one of the more ample Grand Cru sites, and Billaud-Simon’s version is described as a rich Grand Cru with intense mineral notes, candied fruit, a firm yet rounded structure and a lingering saline finish. Excellent with lobster, crab, scallops, langoustines, oysters, grilled prawns, turbot, roast chicken, creamy seafood pasta, mushroom risotto, Comté and aged goat cheese. For a Singapore table, this would work beautifully with lobster noodles, crab bee hoon, steamed garoupa, Teochew steamed pomfret, drunken prawns, scallops with garlic, seafood hor fun or roast chicken rice with ginger sauce.
