A classic village Chablis with a polished 2023 touch — bright, fresh and finely textured, showing notes of lemon peel, green apple, white flowers, pear, chalk, oyster shell and subtle saline minerality. The palate is clean and elegant rather than heavy, with balanced acidity, a silky mid-palate and a crisp mineral finish. The 2023 vintage gives the wine a little more fruit charm and approachability, while still keeping the domaine’s signature Chablis purity and limestone freshness. Billaud-Simon itself describes its Chablis wines as light, crystalline and iodised, shaped by the distinctive mineral terroir of Chablis. Excellent with fresh oysters, sashimi, sushi, grilled prawns, steamed fish, lobster, scallops, crab, roast chicken, goat cheese, creamy seafood pasta, white asparagus or dim sum. For a Singapore table, it would also work beautifully with Teochew steamed pomfret, Cantonese steamed garoupa, drunken prawns, Hokkien-style seafood dishes or lighter crab preparations.
