The 2023 Montée de Tonnerre is one of the most complete and impressive Premier Cru wines in the Billaud-Simon range — sitting close in character to Grand Cru Chablis with its combination of depth, structure, mineral power and finesse. The wine shows aromas of lemon zest, ripe citrus, green apple, pear, white flowers, oyster shell, wet stone, iodine, delicate spice and chalky minerality. On the palate, it is layered, precise and harmonious, with the generosity of the 2023 vintage balanced by vibrant acidity and a long, saline, mineral-driven finish. Compared with Fourchaume, it feels more serious and tightly composed; compared with Les Vaillons, it has more depth and breadth; compared with Mont de Milieu, it is perhaps more refined and complete.Excellent with oysters, sashimi, sushi, grilled prawns, scallops, lobster, crab, langoustines, steamed fish, roast chicken, white meats in cream sauce, mushroom risotto, goat cheese and aged Comté. For a Singapore table, this would pair beautifully with Teochew steamed pomfret, Cantonese steamed garoupa, drunken prawns, lobster noodles, crab bee hoon, seafood hor fun, steamed scallops with garlic, or dim sum with prawn and seafood fillings.
