The 2023 Fourchaume shows the richer, more generous side of Chablis, while still retaining Billaud-Simon’s hallmark precision and saline freshness. Expect aromas of ripe citrus, nectarine, pear, white flowers, iodine, oyster shell, subtle hazelnut and chalky minerality. On the palate, it is medium-bodied, supple and polished, with more weight and breadth than the village Chablis, but balanced by fine acidity and a clean, mineral-driven finish. Fourchaume often gives a slightly fuller, more opulent expression of Chablis, and this 2023 captures that beautifully without becoming heavy. Excellent with lobster, scallops, grilled prawns, crab, oysters, sashimi, sushi, steamed fish, roast chicken, creamy seafood pasta, mushroom risotto, goat cheese and Comté. For a Singapore table, this would be lovely with Teochew steamed pomfret, Cantonese steamed garoupa, drunken prawns, crab bee hoon, lobster noodles or dim sum with seafood fillings.
