A rare, gastronomic Rosé Champagne built around Henri Giraud’s perpetual reserve, begun in 1990 and refreshed through the 2022 harvest. Predominantly Pinot Noir from Aÿ Grand Cru with Chardonnay and a small addition of Aÿ red wine, it is partly vinified in Argonne oak and aged for at least three years on lees. The result is richer, deeper and more vinous than a conventional Rosé Champagne.
Delicate copper-pink in colour, opening with wild strawberry, cranberry and blood orange alongside glazed apple, apricot and orange blossom. With air, layers of toasted hazelnut, ginger, cedar and subtle brioche emerge. Broad and creamy yet energetic on the palate, framed by chalky minerality, fine tannins and a persistent saline, gently spicy finish.
Excellent with salmon or tuna sashimi, roast duck, char siu, lobster, grilled langoustines, Japanese wagyu or mildly spiced Asian cuisine. Its structure makes it particularly suited to the dining table rather than simply as an aperitif.
Best at 10–12°C in a white-wine glass. Allowing it 10–15 minutes in the glass will reveal considerably more complexity.
