Les Vignes de Bisseuil is a refined Premier Cru Extra Brut produced from 70% Chardonnay, 15% Pinot Noir and 15% Pinot Meunier, grown on chalk-rich, south-facing vineyards in Bisseuil. Chardonnay brings elegance and mineral precision, while the two red varieties contribute body and depth. Fermented in oak with indigenous yeasts, the wine typically spends around four years on its lees and is finished with a very low dosage.
Aromas of white flowers, pear, white peach and baked apple mingle with lemon zest, tangerine oil, pastry and subtle spice. The palate is generous yet finely sculpted, combining creamy texture and fine bubbles with vibrant acidity and a long, chalky, saline finish. It pairs beautifully with oysters, sashimi, grilled scallops, steamed fish, tempura, roast chicken and creamy seafood dishes.
More Chardonnay-driven and mineral than Les Prémices or Les Vignes de Vrigny, it offers an elegant yet distinctly vinous expression of the Egly-Ouriet house style.
