On the palate, it is structured and precise, with a silky mousse, vibrant acidity, and flavours of lemon confit, orchard fruit, and spice, finishing long with a chalky, saline edge. Exceptionally gastronomic, it pairs beautifully with oysters, caviar, sashimi, lobster, and butter-poached seafood, while also elevating roast poultry and creamy dishes.
