When aerated, it evolves into aromas of bergamot, linden, candied lemon, blackcurrant, raspberry, and toast. Fresh with creamy effervescence, fruity matter supported by lemon-like acidity. The finish offers concentrated flavours with liquorice and toasted bread. Ideal pairing: veal tenderloin, wild mushrooms, Champagne sauce, or roasted quail with star anise and tea sauce.
