Made entirely from selected, estate-grown Sangiovese Grosso, the 2017 was fermented in vitrified concrete tanks using indigenous yeasts from the estate’s vineyards. It then matured for three years in Slavonian oak casks, allowing the wine to develop while preserving its distinctive fruit and savoury character. At 13.5% alcohol, it offers a beautifully measured expression of this warm vintage.
Red cherry and woodland berries unfold alongside citrus peel, dried tobacco, liquorice and refreshing balsamic spice. With air, the bouquet gradually reveals greater depth and detail.
The palate combines a vibrant fruit core with fine tannins and lively acidity, leading to a long, savoury finish touched by thyme and rosemary. There is warmth and generosity here, carried with the poise that makes Biondi-Santi so distinctive.
Our pairing recommendations begin with roast rib of beef, rosemary-crusted lamb or duck with a light cherry jus. The wine’s acidity refreshes the palate, while its tannins complement the richness of the meat.
For an Italian-inspired celebration, serve it with bistecca alla Fiorentina, wild boar ragù or porcini pappardelle. Aged Pecorino offers a delicious final pairing, echoing the wine’s savoury depth.
