Compared with Bougros, Les Preuses feels more elegant and finely detailed; compared with the Premier Crus, it shows greater depth, length and ageing potential. Excellent with lobster, crab, scallops, langoustines, oysters, sashimi, sushi, turbot, Dover sole, roast chicken, white meats in cream sauce, mushroom risotto, Comté and aged goat cheese.
