On the palate, it has the silky, creamy texture that makes it so appealing, yet the wine remains fresh and finely poised. Its depth unfolds gradually, leading to a long finish with a gentle salinity and the chalky definition of Côte des Blancs Chardonnay. It is a Blanc de Blancs of both pleasure and precision, with enough substance to carry an entire meal.\u003cbr\u003eBegin with oysters or sashimi, where the Champagne’s freshness and saline finish will echo the delicacy of the seafood. Its creamy texture also makes it a natural partner for butter-poached lobster, roast John Dory or crab served with a light butter sauce. For a Singapore table, we would especially enjoy it with Cantonese-style steamed fish with ginger and spring onion, or steamed crab prepared simply enough to let the sweetness of the meat shine. The wine need not be reserved for a seafood course.
