
La Côte aux Enfants is a great red wine from the legendary Aÿ plot: a pure Pinot Noir, the combination of an exceptional plot and a highly skilled Burgundy winemaking method which is very rare in the Champagne region. The region originally owed its fame to its red wines. Favourites of King Henri IV, the Pinot Noirs from the town of Aÿ were the most popular wines of the French court. La Côte aux Enfants comes from a steep, small 70 acre plot just outside Aÿ which Jacques Bollinger himself reconstituted patiently, at the beginning of the 20th century, from over 50 differently owned plots. It is exclusively planted with Pinot Noir and is a designated Grand Cru site. Since 2009, all vines grown on that site are organically farmed and green harvests reduce the yield to 8,500kgs per hectare. The wines from this plot are used for blending the Rosé Bollinger
A very distinctive red wine with a velvet like texture and subtle balance. This 100% Pinot Noir Grand Cru is vinified as a Bourgogne region method. Following 8 months of aging in small oak casks, one’s discover a wine with a great aging potential.The champagne shows a garnet color, the nose unveils elderberry, licorice, currant and cherry aromas. The palate offers a nice tannic structure and an aromatic balance around red fruits (blackberry, morello cherry, redcurrant).
This very limited production is reserved to the greatest vintages. It is delicious in accompaniment of veal, red meat, poultry or simply with a Tomme de Savoie cheese.
